Michelin-starred chef Angela Hartnett OBE has created a dish exclusively for Fuller’s – a roasted butternut squash and goat’s cheese ravioli that will be on Fuller’s menus from next week.
With Fuller’s customers in mind, Angela developed this delicious winter warmer dish with fresh, seasonal ingredients. While Angela created the recipe, the dish will be freshly made on site by Fuller’s talented chefs. The butternut squash and goat’s cheese ravioli will be served with pangrattato, English cavolo nero, and sage beurre noisette.
This collaboration is the latest from Fuller’s partnership with the Bocuse d’Or UK Academy. Angela is a passionate ambassador for the British hospitality sector and committed to inspiring chefs, and by creating the dish she is demonstrating her support for the Bocuse d’Or UK team.
The Bocuse d’Or is the world’s largest and most prestigious cooking contest – founded by the late, legendary chef Paul Bocuse in 1987. To win the Bocuse d’Or is the pinnacle of any chef’s career.
The Bocuse d’Or UK Academy was launched in 2017 – set up with the purpose to inspire British chefs to be the best in the world and to support Team UK in its mission to reach the Bocuse d’Or podium. Following a great performance at the European heats in March 2022, the current Bocuse d’Or UK Team – comprising Ian Musgrave and Adam Beaumont, both from The Ritz London – will compete in the world final in Lyon in January 2023.
Fuller’s is a partner of the UK Academy – demonstrating the company’s commitment to raising the standards of professional cooking and inspiring the next generation of chefs. As part of this partnership, Fuller’s is working with Bocuse d’Or Team UK chef ambassadors throughout the year to add some of their creations to its menus – with a donation from each dish sold going towards Bocuse d’Or UK team.
