Prairie Fire Releases 100 Limited Edition Bourbon Barrel Aged Imperial Stout BBQ Sauces made with Mondo Brewing Company’s Galileo Imperial Stout

Acclaimed Kansas City BBQ restaurant and taproom, Prairie Fire, has partnered with independent and progressive South London craft brewery Mondo Brewing Company, for the first of Prairie Fire’s new Collaboration Series.

The partnership is starting with the launch of a very limited-edition Bourbon Barrel Aged Imperial Stout and Cherry BBQ Sauce. Crafted using Mondo’s soon-to-be released Galileo Bourbon barrel aged Imperial Stout, brewed in collaboration with California-based Heretic Brewery, and Washington State sour cherries, the resulting BBQ sauce is mild in heat, dark and fruity. Only 100 bottles have been made, so once it’s gone, it’s gone forever.

Mondo’s Galileo Imperial Stout will launch in December 2020 and has been in the making for more than a year. This is an exceptional beer that is going to be well worth the wait.

The stout, which comes in at a punchy 10%ABV, was first brewed in early 2019 with an old friend of Mondo’s founders, Jamil at Heretic Brewery, before being aged in Heaven Hill bourbon barrels for 18 months and conditioned on cacao nibs. The team then brewed a clean version, blending it back and dialling in a boozy and rich flavour profile from both sides of the Atlantic.

For the Bourbon Barrel Aged Imperial Stout and Cherry BBQ sauce, Mondo released some. Beer from the barrels exclusively for this partnership. Prairie Fire and Mondo have a great friendship that goes years back, with owners of both companies being American expats in London.

Mondo’s Co-Founder and Head Brewer Thomas Palmer says “Jamil has been a friend of the brewery for close to five years. We’d made three different beers together up to this point and barrel-aging a unique stout was a logical conclusion for a fourth. He recommended over-aging to 18 months in barrel and blending back with a clean version of the same beer, to achieve a unique flavour profile unattainable by just aging. This beer will just get better and better. We’d been talking about collaborating with Prairie Fire for a while now and when our good friend Michael asked us if we had any dark beers available for a sauce, we knew what to do.”

About the Galileo Imperial Stout
Pale Ale malt provides the base, Aromatic, Black, Carafa III, Crystal, Roast Barley and Special B added for colour, flavour and body, along with Dextrose and LACTOSE. Fuggles hops for bittering. Fermented with Heretic Brewing’s West Coast Ale and Champagne yeast strain.
