Yops® Launches Fermentation-Grown Flavor Technology for NA, Hazy IPA, and Wheat Beers


Evodia introduces new flavors for today’s most competitive beer styles, with their innovative fermentation technology. Yops® is a collection of next-generation flavors created through yeast fermentation, where terpenes and other key flavor molecules are leading the way into the future of flavor.


A New Way to Build Flavor from Fermentation 


 Yops® represents a new era in brewing. Instead of relying only on flavor compounds extracted from plants, this yeast‑based technology produces individual flavor molecules, giving brewers precise control while delivering a fermentation‑derived character that integrates seamlessly into beer. This makes Yops® easy to apply, consistent in profile, and highly compatible with today’s most in-demand beer styles. What makes Yops® unique is its dual sensory function. First, each Yops® blend brings unique flavor compounds—similar to those found in hops or created during fermentation. Second, because these molecules are produced by yeast, they carry a fermentation-derived character. This gives them the familiar backbone of beer itself, making their integration seamless and genuinely authentic. This combination – targeted aroma plus fermented character – is what allows Yops® to integrate naturally into hazy IPAs, wheat beers, and other non-alcoholic (NA) versions of classic styles. While flavor is the primary purpose, brewers often see increased yield from reduced losses when replacing part of their dry hopping, benefiting both beer quality and the bottom line.


The New Yops® Line-Up


Y-Banana is a solution developed to solve one of the biggest sensory challenges in brewing: achieving convincing Belgian blonde and wheat-style profiles in NA beers. These styles, being driven by their fermentation character, are difficult if not impossible to make under restricted fermentation conditions. Y-Banana brings all the esters and phenols that are usually expected only under specific condition such as warm POF+ fermentation, giving NA wheat beers and other Belgian styles the authentic profile they typically miss.

Tropical Grapefruit T-1 is a blend designed for the modern IPA landscape, especially hazy and citrus-driven profiles. It brings a bright grapefruit signature supported by fruity sulfur and green notes reminiscent of passion fruit. This blend offers a clean and natural way to complete and elevate the biotransformation’s tropical expression from yeast and hops. Its fermentation-grown nature helps the flavor sit comfortably within the beer’s structure, rather than feeling layered on top.


Hoppy H-3 is a hop-focused formulation built for styles that demand aromatic intensity. It combines a fresh hoppy backbone with a twist of mandarin and the fruitiness of mango, forming natural enhancement ideal for IPAs, pale ales, and dry-hopped lagers.
